Our Hachamim teach us that "kavush kemevushal" that in many respects pickling foods is like cooking them. Therefore, on Shabbat one should not dip more than four or five cucumbers or radishes in saltwater at the same time since it looks like pickling. However less than that is okay. One may return pickles back to their container if the pickling process is completed. However ideally one should not return them if they are not finished. This is mostly relevant to one who made homemade pickles and wants to sample them on Shabbat. Almost any pickles that can be bought at the store are already finished.
