On Shabbat one may pour hot water from an urn directly onto instant coffee since it has already been cooked at the time of production. However it is better to first pour the hot water into the cup and then to put the coffee in. If when removing the lid of a pot that is on the plata on Shabbat some drops of water drip onto the plata, it is not considered to be a sin. There are several reasons for this. Among them is the fact that the intention is not to cook those drops of water, and also there are poskim that maintain the principle of "en bishul ahar bishul" applies to liquid as well.
